Easter's Ahead! Have a great recipe ready for the entire family!

We're all about health...AND taste! You  may be dieting for fat loss, but that does mean you have to sacrifice flavor! Check out this recipe from Allrecipes.com!

But I want you to consider a few changes!

First, use egg whites or egg beaters-- all the flavor, none of the fat! And use low fat or fat free cheddar or mozzarella cheese. It would also be excellent with fat free low fat feta or goat cheese!

Second, consider using half the potatoes, or none at all if you really want to minimize starchy carbs, and add your favorite vegetables! Consider broccoli, zucchini, roasted red peppers, mushrooms, and even string beans!

Not only will you add antioxidants and vitamins by throwing in all that color, but you'll get extra fiber, as well as save room for a side of toast, and english muffin, or even a pancake! :)

"A simple and hearty ham and cheese breakfast casserole."
Ingredients:
8 eggs
1 cup milk
2 cups shredded hash brown potatoes
1 cup diced cooked ham
1 cup shredded Cheddar cheese
1 to taste salt and pepper to taste
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch glass baking dish.
2. Beat eggs in a large bowl; stir in the milk. Stir in the potatoes, ham and cheese. Season to taste and pour into prepared pan.
3. Bake in preheated oven for 45 to 50, until knife inserted in middle comes out clean 
Nutritional Information (without modifications)-- With no potatoes, you significantly reduce carbs, and if you are using egg beaters and fat free cheese, the fat is lowered to zero! I'd top it with avocado for a healthier, non saturated fat source and sprinkle some marinara sauce on top!
